ipads+smart apps for kids=awesome!
This is kind of pinterest linked, but cool either way. If you are into iPads and using them with your own kiddos or in your classroom, this website is a must. I am on smart apps for kids at least once a day. I always check out their free app of the day and their giveaways are awesome. Healthier eating...it's about time!
So, now that baby #3 is here and I head back to work in a few weeks, I need to get back to my "fighting" weight as I call it. I will be pinning this recipe I found on weightwatchers.com. It's a chili rubbed chicken with pineapple salsa...and OMG was it delightful. To be honest, I'm always kind of skeptical of these types of meals. In my cynical mind I'm thinking, (read this with as much as sarcasm as possible) 'sure its going to taste good...and just because you mix random low fat stuff together doesn't make it yummy.'
Well this one proved me wrong! The kick from the chili powder on the chicken contrasted perfectly with the sweetness of the pineapple in the salsa.
True to form, I modified it slightly. Mango chutney was nowhere to be found at Target and I wasn't about to go the homemade route tonight. I grabbed some orange marmalade and figured it was close enough. I also picked up a can of crushed pineapple (which I did not drain; just spooned in half the can into a bowl). I also omitted the cilantro because I think it's nasty. In its place I put in a dash of parsley and a 1/4 tsp of ground cumin. I prepared some brown rice as a base. For any other WW followers it was 9 points per serving and we have enough left over for lunch tomorrow.
Try this; you won't be disappointed!

Buffalo chicken bites!
So I was supposed to make buffalo chicken wraps for dinner tonight and that was an instant fail since I forgot to get wraps at Wegmans on our weekly shopping trip.
I ended up remembering a pin I had to make buffalo chicken bites and they were a huge success! I only made minor changes to the recipe; I only used two tbsp of Wing sauce because my chicken was already marinated in it. I also used Panko bread crumbs since we didn't have cornflakes.
I also made a homemade blue cheese dressing I found online a couple of weeks ago. It kind of reminds me of O'Hara's.

It's time to begin...
Since last winter, I have become an avid Pinterest user. I have more categories and pins than I thought possible. As I've used Pinterest this summer, I kept thinking, 'I need a way to document all the pins I've tried and record my comments to share with other users.'
I figured the easiest way was to create this blog and keep track of all my "pintresting" adventures. So, stay tuned to learn about all things I try; the good and the bad. As my brother would (sarcastically) say, "That's pinteresting...".
